PC Health Check says my Intel Core i7-6500U CPU @ 2.50GHz isn't supported. However, it is on the list of supported processors.
So, now what?
I have Windows 10 Pro. Could that be the problem? I don't see how as PC Health Check specifically says it's my processor that's the problem.

However there are some alternatives if you want to install Windows 11, but be aware of the disclaimers included in the article:

How did everyone who responded get to the page you shared?
I've attached some screenshots I took today, plus links to the pages. I went to MS site for Windows 11 system requirements, then clicked on the link for the Windows edition I have, Windows 10 21H1 (pro). Then scrolled down, and there it was!

The pages you accessed are not imaginary.
The screenshots you shared show that your processor is supported for Windows 10, which you already have. You should check the link for the version that you want to move to. In this case Windows 11. See my screenshot for the link that you should use.
When you follow that link, you'll notice that your processor is not included in the list for Windows 11.
