How to prevent an account from viewing a local folder

Hi,
to let a company working in my WS2019 i need to create ad admin user and give it to them.
I'd like to prevent them to access some folders, that currently are shared to everyone.
My plan is to block the Security settings permissions for that user (it must be an Admin). Do you think it's the right way?
