A good question. But the question is who the "anyone else" is?
If you mean you want to make sure these emails will not be sent or redirect to another recipient, I think you don't have to worry about that.
If you mean you have concerns on hijacking by someone then I think you could be more confidence about Microsoft O365 security level.
Or if you mean the Microsoft employees may read these docs, no, no one will do that taking the risk of being fired.
Also the emails you sent will be judged by Exchange online security center and Microsoft O365 Security components before received by the channel mailbox.
Microsoft has always been committed to protecting customers privacy and you got the Security and Compliance center to check the items about your organization's security which has many analyse and report functions based on the licenses applied to your account.
Please do understand that the customers privacy and personal data is the most important for us.
And you could also upload files to the channel from your local devices, while not using email messages. This could be the safest way.
