Both Excel 2019 and Word 2019 are version 2110 - Build 14527.20276, but Excel now looks like this. Other apps still look like this.

Same here, same here. Not only Office 2019, but Office 2016 and 2013. If you wish the classic UI like before, just change this value to false HKEY_CURRENT_USER\SOFTWARE\Microsoft\Office\16.0\Common\ExperimentConfigs\ExternalFeatureOverrides\excel\Microsoft.Office.UXPlatform.FluentSVRefresh

The only option the set Excel back to the previous look&feel is to modify the registry (as already mentioned above):

Thanks. All other office apps also have the same registry keys, so why is the new UI not applied consistently across all these office apps?

as far as i know, the appearance of your office apps including Word and PowerPoint are not fully controled under version number, update channel nor this registry key, but for Microsoft decided to push to your devices. And the mechanism of this operation possibly is that Mircrosoft push contents to all users way before they awared of, usually month ago, then an algorithm decided to turn a switcher on and off to when the time these contents will be applied to, and that's the time you had found it changed.

That's the reason sometimes we all have the same version number on both Office and Windows, but someone has the new UI and others don't.
back to your question, WHY does it not applied consistently across all these office apps?

frankly, I don't know. That's basically a pure inner-core matter decided by Microsoft. Perhaps they think Excel is a high-end software for data engineer or data analysis, or it's just a bug. who knows...

Hi, for me there are still differences after changing that. This only happens in excel.
