Only the "IoTHub Device Client Sample" app exists in the GitHub repository you shared.
What I am looking for is the "IoTHub Service Client Sample" app.
I see now, sorry I didn't browse through the repo enough to notice that the Service Client sample is indeed missing. I noticed there is an open issue on the repo asking for it. Cocoapods does mention the Service SDK being available, but the link to samples results in a 404. I hope somebody else can help you with this!
