What's the best practise to manage the e-mail crypted with the external collaborators? I made the protection rule with for "only recipients" but I have a lot of problem with this label.

Are you using Azure Information protection to create rules or Office 365 Message Encryption ?
Hi,
I created the policy on the Azure Information Protection in the Azure Portal for Legacy client and I created the policy in Office 365 Portal for Unified Label too.

take a look at this

using "Encrypt Only" in outlook would take care of emails including the ones with Office attachments. In addition now there's a support for PDF documents (as described in above article).
