We wanted to disable this date modified field because it could cause confusion to users as this does not signify the version release date.
Also, I'm seeing the dates in the "Date Modified" field in Software Center is much older than the "Modified Date" mentioned in SCCM.
I have no idea what that date corresponds to. As noted, there's no way to customize this today but you can certainly file feedback in the ConfigMgr console on this to get a work item added so the product team can investigate and evaluate adding functionality to hide this.

I tested it in my lab and the Date Modified on the Software Center is as same the Last Date Modified on the MECM console. I deployed 7-Zip for the client yesterday and I edited the name of the application on the MECM console in the Deployment Types. I noticed that the Last Date Modified on the MECM console updated.

Also I reviewed the Date Modified date on the Software Center and I found that the date is updated either.
I agree with Jason. We could not remove "Date Modified" field on the Software Center right now. Please follow Jason's suggestion and check whether there are any feedback from Product teams. Also you could post your new requirement on MECM UserVoice and the product teams will replies as soon as possible once they see the post.
