The authentication methods activity dashboard will give you data around how many users are using Windows Hello For Business and how many have signed in with it. You can find this dashboard by searching for Azure AD Authentication Methods in the Azure Portal.

If you want specific insights into who is using Windows Hello, you can create a Log Analytics Workbook from the AAD sign-in logs that includes a report of who is signing in using Windows Hello, how frequently, from which devices, and from where in the world. There is an example of such a workbook here.
