Review this old thread where someone was actually able to install SQL Server on Parallels. I would recommend that you try with SQL 2019 rather than SQL 2016.

2022-03-13T19:55:27.343+00:00 Generally, when installing SQL Server and you get problems, it is better to select the option "Download media". Not that I would expect the installation to sail through. Normally, I suggest people to look at certain files to get more information to figure out why the installation fails.
But since we know that you are on a platform which is not supported, I'm sure how meaningful this is. When it comes to M1 and Parallels, I don't know anything about them myself.
I think the best option for your class is to try to find a "normal" Windows computer. Getting to work on M1 and Parallels may work eventually, but it can take some time to figure things out.

There is nothing to fix, SQL Server isn't supported on Mac OS with M1.
Create a Windows OS Virtual Machine or get a Windows machine.
