When Hosting a conference call or MS team call on the MS team, the participants don't want to know who else is joining on the call and should not see each other.

Is there a way to do this

I am afraid there is no settings could control who cannot see someone join the meeting. If you don't want the participants to know who join the meeting, you could try to schedule the live event.
