This is not expected behavior, so you may try run Windows Update and download and install all updates.
Open start and search for feedback and open the Feedback Hub app and report this issue.
Try perform a Clean Boot and see if the problem persist?

Startup Applications Automatically Getting Disabled
So, recently I noticed that some applications I enabled to startup don't start up on boot anymore. I have no clue as to why this is but I noticed in Task Manager whenever I enable them again and restart/shut down my computer and it just goes back to being disabled. This only applied to Microsoft Store (UWP) apps and not non-UWP applications. Is it because of a Windows 11 bug or is it something else?

2024-10-17T17:56:42.8033333+00:00 I have the same problem and i quite see a pattern, every single app i download from the ms store does the same thing.a simple solution is to open the app you want to autostart then find it in the processes inside the task manager and open the file location, then find the .exe file and make a shortcut of it and put it in this path
C:\Users\<YourUsername>\AppData\Roaming\Microsoft\Windows\Start Menu\Programs\Startup
you should find it in the startup tab inside the task manager and try to close and reopen the task manager and it should be also on, hope this helps. (and btw this is 2 years late so sorry ig)my guess of what causes that problem is the 3rd party apps that tweaks windows, i use CTT tool to disable background MS apps so you must have a similar app that does a similar thing.
