In my tenant, where exactly will I set up Sensitivity labels for SharePoint sites and OneDrive?

You could set sensitivity labels for SharePoint Online sites and OneDrive through following steps.

1.Go to Microsoft 365 admin center -> Compliance -> Solutions -> Catalog -> Information protection -> View -> Open solution -> Labels -> Create a label.

2.Label policies -> Publish label.

3.Go to SharePoint admin center -> Active -> Active sites -> Select the site collection -> Set sensitivity label for the site collection.

For Azure entitlement, you should open an another question with Azure related tag.
