For timeout issue, please try to edit the Enrollment Status page and try increase the "Show an error when installation takes longer than specified number of minutes" setting. And then check if it is successful to enroll.

Also, we can use Michael Niehaus's script to decode what is exactly failing (most likely an app installation timeout) https://oofhours.com/2020/07/12/windows-autopilot-diagnostics-digging-deeper/
