Our organisation is moving across to a new call taking solution, but ActiveSync alerts are being sent to an old email address that we originally used for logging jobs on our legacy system. How do I go about changing the contact address for ActiveSync alerts in EAC?

Did you mean the quarantine reminder that Andy mentioned? If so, you can change the contact as Andy provided. If not, could you describe your request clearly?
Do you mean the quarantine notifications?
Go to Mobile and on the far right is the "Edit" button. You can access and change there

As a follow up question, I don't suppose you know if it is possible to use a 365 address with On Prem Exchange do you? I have been unable to select the email address we have on our system, and the only notable difference between it and others is that it is a 365 mailbox
Try using PS and setting there:
-AdminMailRecipients
The AdminMailRecipients parameter specifies the email addresses of the administrators for reporting purposes.
