Have you met some error when spooler service stopped?
I suggest that we could try to run build-in printer troubleshooter tool to check. Meanwhile, perform a clean boot to disable no Microsoft service and security software temporarily.
I suggest that we could try to run build-in printer troubleshooter tool to check. And install the latest security updates to keep the system has been update the latest version.

Also I suggest that we could check the event viewer application event to find if any crash spooler service stopped.
Try to check event log about application log any crash related to printer service (such as event id 1000).
