When I cut a release for a UWP application and release it through App Center, it disappears after some time. I can send the link of the distribution and some can download it, but then the release is removed from the site and a release not found error when clicking on the email link. The time it takes for the release to be removed seems to be random. Sometimes it removes in minutes, other hours. It does not require a user to download the app for it to disappear, and the analytics once downloaded keeps the version.
