The changes appear in the information tab on the side will cut off after certain incidents. Is there a way to view activities log on a files, folder, or a user (OneDrive business) on a share folder?

Viewing file activity logs in OneDrive and SharePoint Online is similar.
Click the button in the upper right corner to open the details pane, it will display the activities of the entire folder, and select a file to display the activities of the corresponding file.
UPDATE:
Go to the audit log to view.
The specific audit location is in the Compliance of the M365 admin center. You could select the specific activity of the folder, search the site folder to get the audit log, and finally export it.
It is worth noting that the search on the audit side is sometimes not comprehensive. Searching a certain location by site location or file name may result in some discrepancies. It is necessary to search multiple times to determine the way to get the most results.
If you find it convenient or useful to export, I suggest you try it, but I still recommend opening the details pane via the button to display it by week, because there will be no omissions.
