Unlink to remove local files?

I'm trying to stop the sync of a SharePoint library to my local drive and remove the local files, however when I tried to unlink or stop sync, a warning pops up to say that the action would remove online file and only local file remains which is the opposite of what I'd like to do.
How do I stop the sync and remove the local files so that only Online library remains?

    The situation you encounter is expected behavior.

    So far, when synchronization is stopped, online files are deleted and only local files are retained.

    Depending on your situation, I recommend that you stop syncing, and then you need to recover all deleted files in the site's recycle bin and then manually delete the locally stored files.

    To prevent unexpected situations, I recommend that you recover files from the recycle bin in SharePoint online, confirm that there are no omissions, and then manually delete them locally.

    Is this the only way to stop the sync?
    Will recovering from the site's recycle bin capture all the versions as how they appear now?

    This sharepoint site that I need to break the sync contains all shared files and folders for our organization and I need to be certain that there's no risk of losing data.

    Would you know how long the restore from the recycle bin would take for about 2TB of data (probably close to 100,000 folders and millions of files)
