I try to edit my group by affect a dynamic assignment like discribed in unit Assign users to Azure Active Directory groups.
I activated my Azure AD Premium 2, then i sign out and sign in again, but no change in my group properties:

The screenshot above shows that the Membership type dropdown as enabled, so you should be able to select "Dynamic user" from the menu therein. Are you saying you're not seeing this option, or is there something wrong when saving the changes or?
You do not need Azure AD Premium P2 for this, dynamic membership is a P1 functionality.

I did the same instructions requested using my own free subscription by activating the Azure AD Premium 2 (as indicated in the exercise), but I do not find the same result.
Seems like the exercise needs to be updated, The official documentation clearly mentions that Dynamic groups are a P1 functionality: https://learn.microsoft.com/en-us/azure/active-directory/enterprise-users/groups-create-rule
In any case, were you able to get it working? If not, can you specify what exactly happens when you try to select Membership type?
So it seems like that you said "the exercice needs to be updated" because we cannot change the properties of a group once created: we should select it before creting the group:
