Uncoupling On-Premises with AAD

I'm sure this has been asked, but I've been looking around and can't find a good roadmap.

We're currently in an On-premises domain environment replicating to Office 365 and Azure Active Directory. I'd like to remove the On-premises device and just use AAD for our domain, controller, and policies. We use office 365 for Email, Teams, and files already. Just want to not make any big mistakes when removing the on-premises server. Suggestions and help are greatly appreciated. We're small, only like 80 users, so account management shouldn't be a big deal. Thanks!
