I have checked and answered the WP Mail SMTP documentation.

I think you registered your application and set it up for WP Mail SMTP, but you may have registered your application in another tenant as you expected.
You can re-register the application.
I'm not sure, but looking at the WPMailSMTP documentation, it looks like you can remove Conneciton. So, you can reset the grayed out part by deleting and recreating the connection.
