I just added a third monitor and when doing so, one of the other 2 greyed out and I no longer have the ability to change the display setting. Its hard coded at 640x480. I have tried going to advanced and 'list all modes' i only have 640x480 options. thoughts?! Please see attached. Its also connected via Display port.

I would guess that your graphics card is not able to drive 3 monitors and it has defaulted one of them to the lowest possible resolution. Have you tried switching them around to see if it's the output port causing the issue or if it's specific to the one monitor?

Try update Windows and update your Graphic Card driver.
