You should have it on at least 2, but they should be on dedicated servers where no other services run or on your web front ends. They should not go on any backend tier.
Should Distributed Cache Be On All Servers?
Hello,
I was wondering if it's recommended to have Distrusted Cache service turned on for each server in the farm or is it okay to have it just enabled on one web/app server only?

2020-09-09T06:34:03.253+00:00 Ideally Distributed Cache must have it's own dedicated server in a large farm. Alternatively, you can use WFE Servers to run the DC service.

Add to Trevor, according to this article, "Distributed Cache service can be deployed in two modes: dedicated mode or collocated mode. In dedicated mode, all services other than the Distributed Cache service are stopped on the application server that runs the Distributed Cache service. In collocated mode, the Distributed Cache service runs together with other services on the application server. Dedicated mode is the recommended mode in which to deploy the Distributed Cache service."
