I want to create some new email addresses hosted in O365 but leave my original ones hosted by Westnet, is it possible to have both.

It's supported to add and use domains from different registrars. You can check these for more details about buying and adding a domain:
Buy a domain name,
Add a domain to Microsoft 365.
