How do you patch the operating system of an Azure File Sync server

We are considering deploying Azure File Sync to extend our on-prem Windows 2019 file servers, for various reasons clustering and DFS-N are not possible within the environment.

The guidance notes make clear that snapshots and local backups are not supported, so my question is how do I apply patches to the on-prem server?

Normally we would perform either a VMware snapshot (or traditional backup) of the systems before an O/S patch was applied and be able to use that as a recovery point, if these are unsupported and could corrupt the data, what are the options here please?
