How to define a phrase with more than 128 characters to be detected in a document?
What type of confidential information to use? (Regex, words, etc)?

Are you referring to creating sensitive information types in Azure Purview or in another one of the Microsoft DLP related tools?
If it’s Purview, the max string match is 1024.
Yes regex is one of your options.
