This is just general question, as i have done migration...

We wish to keep computer name (eg mail)..

WHile certificates would probably break if we changed, and since computer name is integrated into AD, i think i know the answer, but would it be ok to change this after everyting is done ?

eg... our exchange 2013 domain is mail.xxxx.net.au

new sever on same domain must be different (mail2) due to name clash...

After we decom. exchange 2013 and turn it off can we then change new server name to mail... or will it break everything ?

Also, what is advisable rule of thumb. (migrate system mailboxes and heath mailboxes etc.. or not) ?

Renaming Exchange servers is not supported.
However, mail.* can be just a DNS entry for DNS resolution, SMTP endpoint, applications etc.
Then just make the switch in DNS post setup.
