
I actually settled on using Flow to create the SharePoint list item once an email is moved or copied to a folder in Outlook. I used the HTML to Text action to remove the HTML formatting from the body. This seems to work pretty well.

Hello,
Does anyone know a good way to convert an Outlook email into a list item? Or even create a new list item with the Outlook email attached? I am looking into ad-hoc request tracking and am trying to find a way for users to take emails and create list items from them, for tracking purposes.

As a simple test, we can add an email file with the suffix .msg as an attachment to the SharePoint online list.
