What's the version of your Outlook client(File>Office Account>About Outlook), please ensure that you are working with the latest version of Outlook and Windows.
It appears that whenever Exchange is refreshing content, it takes precedence and captures what I'm typing and creates new calendar entries in the next available window.
According to your description, the issue just happened after you added the Exchange account and other accounts in one Outlook profile, right? If so, to analyze your issue, please try to add the Exchange email account into a new separate Outlook profile to check if the issue has any difference.
Is the issue only occurred when “Exchange is refreshing content”? If so, could you compose message normally after the account has updated all folders? And does this issue only happened on some specific situation(such as typing any specific characters, only replying to someone or others)?
For your issue, I tried to add my Exchange account on my Outlook 365(Version 2008 Build 13127. 20296 Click-to-Run) but everything could work normally, which seems to I couldn’t reproduce your issue. I also searched a lot about it and found many similar threads. According to those suggestions, the issue generally may be related to the interference of add-ins and any Outlook customize settings. Running Outlook in safe mode can disable all COM-add ins, many Outlook customizations and not load any registry values, so it’s suggested to run Outlook client in safe mode(Windows +R>type"Outlook.exe \safe">click enter) to check if the issue has any difference.
Besides, in the point of Windows, anti-virus software and other third-party programs also may cause this issue, please try to perform a clean boot in Windows and run Outlook client only to check if the issue still exists.

In order to further analyze your issue and do more targeted tests, please provide me with the version of your Outlook(File>Office Account>About Outlook).
For your issue, it seems to happen when you input any error characters, maybe the input method is an influencing factor, so what's your input method? And could it work normally when you use the default input method of Windows?
Also, any errors about Outlook auto-correct feature may cause your issue, it's suggested to disable these features(File>option>Mail>Spelling and Autocorrect>uncheck all options under "When correcting spelling in Outlook") to test if the issue has any difference.
If it still exists, please try to repair your Outlook client.
