VS 2019: Document-level Customization for Multiple Word Docs?

We are in the process of adding our user documentation (eg: Manuals, Tutorials, Installation Instructions, etc.) into our current software build/solution. The idea is to have these Word documents be updated with information like the latest release version number, and then saved as .pdfs into the build directory. We would still have to use Word to create the core content, but tasks like updating release dates, version numbers, and encoging to .pdf would be done by our build process.

Using VSTO, I can create a document-level customization project which will perform the updates and conversion, but it can only do this for a single document. To perform the same process on multiple documents, I need to create multiple projects, one for each document. This is really messy and redundant, since I am basically running the same code on all documents.

Is there a way I can create a single "Documentation" project, containing all my documentation files, and have the customization apply to all?
