Azure DevOps Board - Activity Values

Question

I would like to edit the values shown in the "Activity" field in Azure DevOps Boards. Currently, the list seems to be locked to the following values:

According to the docs here https://learn.microsoft.com/en-us/azure/devops/organizations/settings/work/customize-process-field?view=azure-devops#review-fields I think I can create a custom field to inherit/extend from the Activity field, and then add that field to my WITs, but is there a simpler way to do this?
