Lately I've been bustin' out with Windows 2008 beta 3 and core server particularly with installing iis7 and I'll post my experimental results soon, but you can can use IIS7 in production now. Old news, but its surprising how many people don't know - if you're a hoster and want to test IIS7 in production let me know and we'll get you on the list!
