Savills is a personal favourite as I think the estate agent business is one that doesn't take advantage of IT nearly as much as they could. These guys are using OWA for mobile access amongst other things.
Check out Blackwell's case study to see how they worked with Ciber and are also integrating LCS 2005. Using clustering they're achieving 99.99% uptime.
The NHS Case Study details the work Lynx has done with them on the RDP to prepare for a 22,000 seat deployment. Finally, the BT case study details the 150 person trial that integrated Exchange 2007 with more than 350 PBX's and 7 voice mail and messaging systems. That should have given it a fair stress test on the new Unified Comms front :)
