The AI bot is partially correct but the reply could use some clarification...

The Default Language applies only to new documents created using that installation of Word. It has absolutely no effect on the content of existing documents.

As the bot tried to explain, Language is a character-level attribute of the text similar to Bold, italic, etc. The deceptive aspect is that it isn't as visually apparent. Documents can contain passages in various Languages determined by the source from which the content originated. Documents received from other sources may be in a Language other than the default of the version of Word in which they are being displayed. Content copied from other sources — especially web sites — also may carry Language attributes which differ.

In order to apply the correct Language attribute in those documents it's necessary to first select the errant text then chooses the appropriate Language from the Tools menu. Language also can be adjusted by modifying the Style applied to the text.

Does anyone have a solution that works for the online version of Word?

What seemed to have been presented and 'accepted' for the online / browser version in Word is:
Top menu - Review. >. Spelling and Grammar. (Doesn't hold the option)

Review > Editor > Set Proofing Language > Choose a language (Whole document or selection)

Tools and Detect language doesn't seem to be available online.

All these sound promising but nothing changes anything about the selected language for parts or the whole document, still refers to the language being English (US)

This is always so pervasive and frustrating for 30 years - can't this be fixed once and for all?

Continuing the frustration, I cannot properly edit any of my old documents using the onle version of Word. Why do 3rd party apps do it better that the author?

The online (web browser) version of Word uses the system language for both display and proofing, although you can change the proofing language in an individual document. This is of course a limitation in Word online (which is limited in many other respects as well).

Language is stored with each piece of text, not just in the default settings. Even if the default is set to English (United Kingdom), parts of the document can still be tagged as English (United States), which makes Word “revert” as you type or move the cursor.

To stop Word switching back to US English, do the following in each affected document:

Select all content in the document (Command+A).
Go to Tools > Language.
Choose English (United Kingdom).
Make sure “Detect language automatically” is not checked.
Make sure “Do not check spelling or grammar” is not checked.
Click OK.

If only some passages switch to US English, select just those passages and repeat the same Tools > Language steps.

Also check the global options so Word does not keep changing language based on keyboard or surrounding text:

In Word, go to Word > Preferences.
In the language/keyboard-related settings, ensure options like “Match font with keyboard” or automatic language detection are turned off unless explicitly needed.

This ensures the entire document is consistently tagged as English (United Kingdom) and prevents Word from defaulting back to US English while editing.
