On a modern site page, the Event web part seems to only filter to the prefilled categories available and only a single value.
Is there a way to filter to a Category value of my choice that is not one of the original listed values?

Per my test, I can reproduce your issue. I can't directly find the event I created yesterday, it will only show the newly created event.
I found a solution, you can click See all, and then filter the event according to your needs, it will display all the categories within the date you selected:

I did not clearly communicate the issue.
On Hub site I have created an Events calendar. I added my own Categories. (Sales, Finance, Procurement)
I wish to show a filtered list of events on an associated site. On the associated site, I created a site page with an Events Web Part on it.
If I do NOT filter the Categories on the Events Web Part, the Events on the associated site page are NOT filtered. All events are displayed. This is correct.
If I filter the Web Part Category to one of the Microsoft Categories (Meeting, Work hours, Business, etc), the Events on the associated site page are filtered. This is correct.
If I filter the Web Part Category to one of my Categories (Sales, Finance, Procurement, etc), the Events on the associated site page are NOT filtered correctly. Three generic events are displayed.

Per my understanding, you could customize categories.
However currently SPO does not support the display of events with multiple values. Some users have expressed the need for improvement and have made suggestions to the official in SharePoint UserVoice. I would suggest that you can also vote and make your suggestions:

And you can continue to use this category when you create an event next time, it will be automatically displayed because it has been automatically saved by the SP:
