No, not possible to change the meeting organizer. This has been a request for many but not an option yet.
You will need to cancel all the existing meetings and have a new organizer create them.
shared calander in outlook creator deleted
We have an employee who was a creator of multiple calendars, and she is leaving. Before we remove her from the system, I read on some treads that those calendars she created will not open for those individuals who have access to them any more. Is there a way to reassign the calendars to another individual so that those calendars will still work?

What's the account that you are working with(Microsoft 365 account , exchange on premises account or others)?
Please first understand under Outlook tag, we mainly focus on general issues about Outlook desktop client, for your issues about mailbox, I tried to research and perform some relevant tests about it.
According to my tests with my Microsoft 365 account in admin center, we could choose if remove the delegate permission to others and set "give another user access to this email " like below.
After that, the orginal permission would be kept and it would convert the usermailbox to a shared mailbox, so we could continue to manage the meeting event.
Also, if you are working with exchange server, we could also try to follow this document to convert the mailbox to a sharedmailbox and assign the permission for your need to manage the meeting: Convert a mailbox in Exchange Server
