I have several computers used for training and numerous users log in to these temporarily. After the user logs off it deletes their profile.
I set up Edge [current version - 95.0.1020.30 (Official build) (64-bit)] to open maximized with three tabs and now hoping it's possible to set the default browser zoom level to 125% or larger (without having the user manually do this every time).
I do not want our server team to create a GPO as this is only forty out of thousands of machines, so hoping for a script although will manually make the change through gpedit.msc or registry, I'm just not finding anything like this while searching the web.

I don't find such script to set Edge zoom level. For your demand, I think there're two options you can try.
Option one:
You can set zoom level in Edge Settings-> Appearance-> Zoom-> Page zoom like below. You only need to set it for once in Edge, then it will work all time.
Option two:
You can add --force-device-scale-factor=1.25
at Edge shortcut Target like below, then it will work when you start Edge. It's a little different than zoom 125%. It not only zooms the webpage to 125% but also zooms browser UI to 125%.
