BYOD with Microsoft Intune on Mac

My upcoming employeer is fine with BYOD, he however requires the installation of microsoft intune.
As I use the device for private purposes as well and have sensitive data on it, I am quite wary of using the same device.
How does Microsoft Intune work in regards to BYOD.
It was mentioned that minimum / maximum OS versions etc. will be defined through Microsoft Intune.
I wonder however, if it is possible for them to change policies etc. after I have setup Intune initially without my consent.
I can't seem to find relevant sources for this case.

    @Tobias Thanks for posting on our Q&A.

    For this issue, if the device is BYOD, it is needed to enroll this device using BYOD enrollment. If we deploy configuration policies (the settings are configured to enabled or disabled) to this device via intune, we can't change the related settings manually on this device. However, if the settings in the configuration policies are configured to not configured, we can change related settings manually.
