Considering the current situation, it is recommended that you try the following troubleshooting
- How did this user create the email? Check how the emails are being created and ensure that the text is being added to the body of the email and not as an attachment.
- It seems that the problem only occurs on the specific client. Please check the system and Outlook version and upgrade to the latest version.
- If the issue continues, try to uninstall MS Office 365 from Mac and reinstall it.
