Based on the information you have provided, it looks like you want to add all employees in your company to a booking page and have the calendar shared to everyone.
Unfortunately, you can only add the members or groups to booking page manually.
From my own testing environment, the scheduled meeting can be overlapped due to employees' availability. For example, you have your own schedules in Outlook Calendar, but other employees are still able to book a meeting with you at the same time. This can happen if Microsoft Bookings does not correctly sync with Outlook Calendar.
