I had the same problem. So far, my solution is to click outside of the color selection tool and mouse over the "Edit colours" button, but this is really inconsistent and I have to do it several times. Microsoft please fix this.
MS Paint is still having problems.
A few problems were fixed, but one problem still remains. In the color slider, the slider keeps skipping to the right left red side by itself as if possessed.
Please fix it.

Uninstall/Reinstall Display adapters driver:
- Right‑click the Start button and open Device Manager.
- Expand the Display adapters section.
- Right‑click your driver and select Uninstall device.
- Check Attempt to remove the driver for this device.
- Click Uninstall.
- Restart your PC. Windows will automatically reinstall the driver. Or you could visit your Graphics & Processor Manufacturer's support sites (NVDIA, AMD, Intel...) to download and install the driver manually.
Open Paint again and test the color slider.
If the problem continues, the next step you can try is to reinstall Paint:
- Go to Settings > Installed apps.
- Find Paint, click the three dots, and choose Uninstall.
- Once removed, visit Microsoft Store to reinstall the app.
Tips:
- Please make sure to keep your system with the latest updates, as newly released patches may resolve underlying issues.
