Based on your description, from my research, I would like to share my perspective:
As Q&A assist suggest, after July 14, 2026, InfoPath will not stop working immediately. Existing forms will still load and function on SharePoint Server Subscription Edition, but Microsoft will no longer provide fixes, security patches, or compatibility updates.
Because the platform becomes unsupported, future updates (for example Windows, browsers, SharePoint CUs updates, ...) may eventually affect rendering or form logic, causing forms to fail over time. Currently, there are no documented specific breaking changes, but the long‑term risk increases as the environment evolves.
For short‑term mitigation, you can keep the forms stable by minimizing changes to the site collections hosting InfoPath forms, avoiding new dependencies, and testing SharePoint SE updates in a staging environment. You can also export XML submissions or convert important forms to PDF as a fallback. It’s also a good time to inventory your forms and identify which ones are business‑critical.
