I would very much like to put the Copilot icon back where it belongs, on the Home tab ribbon, and not have it floating in the work space. How can I make this happen as I don't see Copilot as a viable option in the Ribbon Customization any longer?

Based on your description, I understand that the Copilot icon in Excel/Office 365 has been moved from the Home tab ribbon and is now floating within the workspace. You would like to restore Copilot to its previous, logical placement on the Home ribbon. You also noted that Copilot no longer appears as an option in Ribbon Customization and are looking for guidance on how to change this behavior.
Regarding this situation, this is a new update from Microsoft ; ;while the Copilot icon can’t currently be moved back into the Home tab ribbon, there is a built‑in way to manage how it appears so it’s less intrusive.
You can quickly control the Copilot icon directly from the workspace:
When docked, the icon will move to the side of the screen and stay out of the main working area, making it much less distracting while still available if you need it.

Several other users have reported a similar observation. Based on their feedback, the behavior appears to affect files stored locally on a computer and in OneDrive, while files stored in SharePoint do not seem to be impacted at this time.
You may want to check whether this aligns with what you’re seeing in your environment ; for example, by comparing files stored locally or in OneDrive versus those saved directly in SharePoint. This comparison could help confirm whether the behavior is storage‑location specific in your case as well.

Can you tell me your Word or Excel version/build number. File → Account → About Word (or About Excel) so I can tell you whether your build is one of the versions known to force the floating Copilot UI. (If you have the updated build there is no option to remove the floating copilot.

What you’re seeing is most likely not a broken ribbon setting, it appears to be part of Microsoft’s newer in-document / floating Copilot UI, which has been introduced recently in Microsoft 365 updates.
Can I confirm which app is showing the floating Copilot icon, is it Microsoft Word, Microsoft Excel, or Microsoft PowerPoint?
