Unable to select Transcribe Only in Teams meetings

I am experiencing an issue where our users are unable to select "Transcribe only" in Meeting options when setting up a Teams meeting. Selecting it and clicking Save returns the below, which doesn't give me a lot to go off:

Strangely, if "Record and transcribe" is selected it work fine, and users are able to start transcription from within the meeting once it begins.

We haven't made any recent changes to our applied policies and to my eye they look correct

Wondering if anyone can provide some insight to what's going wrong. I feel like I'm missing something obvious.

    From what you've share, I understand that users can select “Transcribe only” in Meeting options, but when they click Save, Teams shows “Something went wrong. Try again” At the same time, “Record and transcribe” saves correctly, and users can still start transcription manually after the meeting begins.'

    I would like to clarify that the “Transcribe only” option is a new automatic meeting setting in Teams that allows transcription to start automatically without creating a recording. Because this capability is rolling out across tenants, some organizations may temporarily see the option in Meeting Options, but when they click Save the service may not yet accept the setting, resulting in a generic “Something went wrong. Try again” message. However, “Transcribe only” also depends on admin policy.

    Please also ask that admin verify these two items:

    1/ Organizer policy allows transcription In Teams admin center > Meetings > Meeting policies > Recording & transcription > confirm Transcription = On for the organizer’s policy.

    2/ If your tenant has “Who can record and transcribe” set to “No one” If that meeting option is set to No one, Teams will force automatic transcription options (including “Transcribe only”) to be off
