If you could, please check under: Settings and more ... > Settings > Privacy, search, and services > Search and connected experiences >Address bar and search and let me know what do you see under “Search engine used in the address bar”? For example, is the dropdown greyed out, missing or does it switch back to Bing after you select Google?

In Windows 10 or Windows 11 in S mode, Microsoft Edge must remain the default browser and Bing must remain the default search engine. Chrome (or any other browser) cannot be set as the default while the device is in S mode.
To change the default browser to Google Chrome, Windows must first be switched permanently out of S mode. After switching out of S mode, any browser (including Chrome) can be installed and set as the default in Settings > Apps > Default apps.
