I want to create classes and channels in my team but I do not see that option in my personal account. If this cannot be done with the family subscription, how can I change my subscription and how do I create a work email account?

Do you work for an organization that uses Office 365 for Education? This is not as simple as creating a work e-mail account and will require a Education tenant with licensing to create classes for Teams.

I agree with the above, if you work for your organization with Office 365 Education, you'll need the appropriate license.
