How do I give permission for a user to edit documents?

I am registered as the admin and manager for my company yet I still don't have access to edit documents. I signed up under business when I purchased Microsoft 365, I run a small company and there are many features that do not apply or seem helpful to me. I am pretty overwhelmed at this point. I just needed access to Word, Xcel etc and this is very complicated now.
