Windows 10 is a client OS, Windows 2012 is a server OS; you can not "change" (=upgrade) it.
You have to do a clean, new installation of Win 2012.
Hello there,
Clean install is simplest way to install Windows Server, where you install on a blank server or overwrite an existing operating system, but you will need to back up your data first and plan to reinstall your applications. There are a few things to be aware of, such as hardware requirements, so be sure to check the details for Windows Server.
An in-place upgrade allows you to go from an older operating system to a newer one while keeping your settings, server roles, and data intact. This article will teach you how to move to a later version of Windows Server using an in-place upgrade. https://learn.microsoft.com/en-us/windows-server/get-started/perform-in-place-upgrade
Install, upgrade, or migrate to Windows Server https://learn.microsoft.com/en-us/windows-server/get-started/install-upgrade-migrate
Hope this resolves your Query !!
