One Drive Pause Sharing Files, and Deletion of Files

Hi, so I've been looking around for a tutorial on how to permanently put a pause on the sharing of my computer one drive folder, to my phone. I can see that I can pause it up to 24h, but that isn't what I want, and older tutorials don't show the layout I have being windows 11, and nor the choices I have. It seems like I have a lack of those.

The reason I want to do this is because for some reason onedrive is making a full copy(?) of my computer files, sticking it on there, and sharing it with my phone, and I'm not sure quite why it's doing that. I would also like to stop this because it keeps on notifying me that my storage is full.

I would also like to delete these files off my onedrive too because I don't need them there, but I also don't know if it'll wipe them from my computer as well.
