As I understand it, a Two-way mirror storage pool is just 2 drives with the same data on it. I would like to remove one of the drives to use in another computer. Is it as simple as removing one drive and putting it in the new one and reformatting? And keeping the data in the current computer intact? Thanks!

I would suggest to use the Disk Management and break the mirrored volume.
Disk Management -> Mark Mirrored Volume Set -> Right click and choose "Break Mirrored Volume ..."
After this is done you can remove the disk without any problems.

Where is the option of Mark Mirrored Volume Set. When I go to Disk Management, it just shows the Volume Name, Simple Layout, Basic Type, NTFS, etc. And when I look at the graphical part, it just shows Disk 6 and the color as a regular drive.

How did you setup the mirror set?
